Recipe: Fresh Gulf Shrimp in Barbecue Butter

Ingredients

  • 4 pounds unpeeled jumbo fresh shrimp
  • 1 tablespoon seafood seasoning
  • 2 tablespoons extra-virgin olive oil
  • 3/4 cup amber beer
  • 1/2 pound Barbecue Butter, cut into pieces
  • 1/4 cup chopped fresh parsley
  • French or sourdough bread

How to Make It

  1. Peel shrimp, leaving heads and tails on; devein, if desired. Sprinkle shrimp with seafood seasoning. Heat oil in a large, deep skillet over medium-high heat. Add shrimp, and sauté 5 minutes. Add beer, and cook 5 minutes or until beer is reduced by half.

  2. Reduce heat to medium-low; stir in 1/2 pound Barbecue Butter, 1 piece at a time, and cook, stirring constantly, until thick and creamy. Add parsley. Serve immediately with bread for dipping.

Shrimping with the Zirlotts

Working on the shrimp boat could be such fun at times.   It was always a pleasure to pull the net in and see all those beautiful Gulf Coast shrimp, among the fish and crabs. Shrimp Season in Alabama usually started the first week of June and lasted through April.

When getting ready for the “brown shrimp opening”, there was always a buzz about town.  Everyone was excited!  Gathering supplies and making repairs to the boats.  Having the “nets dipped” and hung in the trees to dry.  The day before the big “opening”, boats and trucks were lined up at the ice dock to load up.  The local grocery store was busy boxing groceries for the bigger boats that would stay out about a week.

Smaller boats could only work 1 or 2 days and need to come in to unload their catch, refuel and re-ice to go back out. Vic and his brother, Chris, co-owned a 53 foot shrimp boat named the “Amanda Di-Ann” after 2 of our girls and Chris’ daughter. The brothers built the boat themselves with a little help from some relatives.  After about 8 years, the Amanda Di-Ann was sold and Vic built another boat, 28 foot “Katie Di-Ann”.  We worked on our “Katie Di-Ann” for about 17 years before finally retiring her and getting a different boat, the “Gulf Gold”, which we still own and operate.

Vic and I worked the “Katie” every night, then come in the next morning.  I could sleep a little during the night on the boat, but needless to say, it was not very restful.  Then during the day, I would weigh, grade ,de-head, and sell the shrimp, while Vic slept some, then repaired nets, and got the boat ready for the next night.  Hard work, but enjoyable.

Catching those nice brown shrimp in the summer, then the white shrimp in the fall, we provided folks with a lot delicious meals. I would separate the Jumbo shrimp for grilling, Large shrimp for frying, Medium shrimp for boiling, and small shrimp for gumbo and salad.  People would fill their freezers while the shrimp were plentiful.  Then they could eat shrimp all year.  Boiled shrimp, shrimp scampi, shrimp jambalaya, gumbo, grilled shrimp, shrimp salad…you name it.  So many ways to prepare shrimp and so good any way their are cooked.

Ingredients

Mix spice seasoning and flour together. Lightly coat shrimp with seasoned flour. Heat a large skillet over high heat. Add butter and olive oil. Once hot, add shrimp (you may have to cook in batches or use 2 skillets if you can). Just after adding the shrimp, add vinegar, lemon juice, balsamic vinegar, mustard, hot sauce, thyme, oregano, green onion, parsley, garlic, bay leaves, red pepper flakes, paprika, and Worcestershire sauce. Cook until the sauce reduces and the shrimp is cooked, about 4 to 5 minutes. Serve as an appetizer with French bread.

Lets talk about how to cook and serve Alabama gulf oysters.

Oysters are usually consumed from September – April, as during the summer months they spawn and their flesh becomes milky and too soft to be pleasant to eat.

It is best to buy Alabama gulf oysters from a reliable source such as Zirlotts Gulf Products so that you know that they are good quality. They can be stored in the refrigerator for up to 2 days but should really be eaten as soon as possible after purchase. If eating the oysters raw, they should be consumed immediately after shucking (opening).

Store the oysters on a large tray or plate, covered with a damp tea towel in the refrigerator until you are ready to prepare them. They should not be immersed in water, as this will kill them.

Cleaning your Gulf Oysters

When you are ready to serve the oysters, if you are going to eat them in the traditional way, scrub the shells under cold running water with a brush to remove any dirt and debris. Discard any shells that are open, cracked or damaged. Allow 6 – 12 oysters per person.

Opening your Alabama gulf oysters

Take an oyster and wrap it in a clean fresh towel or cloth. Ensure that the flatter shell is facing upwards and that the hinge is pointing towards you.

Grip the oyster shucking knife firmly and insert into the small hole located in the hinge. If you don’t have an oyster knife, use a tough short knife with a strong, blunt blade. Do not use a sharp kitchen knife.

Twist the oyster knife until the shells snap apart. Then run the knife blade backwards and forwards along the upper shell in order to sever the muscle that holds the two shells together.

Gently remove the top shell, taking care not to spill any of the liquid inside. It is a good idea to open the oysters over a bowl.

Finally, remove the black beard from the main body and serve.

Serving your gulf oysters

Raw Alabama gulf oysters are traditionally served in their shells with their juice on a bed of crushed ice. The classic accompaniments are cayenne pepper, a wedge of lemon to squeeze over the flesh and a thin slice of buttered brown bread.
Alternatively, they can be seasoned with salt and cayenne pepper with a dash of Tabasco sauce. Some restaurants serve them with a Mignonette sauce made from lemon juice or sherry vinegar, chopped shallots, mixed peppercorns and dry white wine.

Cooking gulf oysters

In general, most types of oyster, including Alabama gulf oysters are eaten raw and this is the most popular way of preparing them.
There are a number of well known cooked oyster dishes including the butter-rich Oyster Rockerfeller, Oysters Mornay, Angels on Horseback and Oysters au gratin.

When cooking with oysters, you should still work with live oysters and open them by steaming for a few seconds. The oyster should be removed from the shell as above and then used in the recipe as instructed.  As the oyster has such a delicate flavour, most people prefer to eat them raw unless they are cooked very lightly in a matter of minutes or seconds.

Fresh off the boat, gulf white shrimp.

White Shrimp

Gulf Jumbo shrimp are always best when de-headed and washed immediately, then packaged for the freezer.  At Zirlott Seafood, we weigh the Gulf shrimp as soon as the boat comes in. After removing the heads, the shrimp are washed thoroughly, then packaged in cartons to be placed in the freezer.

Sometimes, the shrimp need to be sorted according to size.  Jumbo Gulf shrimp are counted to determine how many it takes to weigh a pound.  That’s where we get the numbers.  Under 10 is considered the largest of Gulf shrimp, either brown or white.  Occasionally, we get some that are less than 8 to the pound, which is huge.  Here is the rundown on the sizes:  10-15 is called Jumbos,  16-20 is called Extra Large,  21-25 is Large, 26-30_Medium/Large, 31-35 is considered medium.  The higher the number, the smaller the shrimp.

Whatever your recipe calls for, you can use almost any size you want to prepare.  Just consider how many servings the recipe calls for and then adjust the number of shrimp accordingly.

Delicious BBQ Recipes for Alabama White Shrimp

Alabamians traditionally grill split chickens, then dunk them into a mayonnaise-based “white sauce.” THE WD TWIST: Brush the sauce on grilled shrimp and make extra for dipping and drizzling.

Ingredients

1 c. mayonnaise
1/2 c. cider vinegar
2 tbsp. prepared horseradish, drained
1/2 tsp. cayenne
kosher salt
Pepper
2 tbsp. paprika
2 1/2 lb. large peeled and deveined shrimp
Toasted bread, salad greens, and potato chips, for serving
Skewers

Directions

Heat grill to medium heat. In a medium bowl, combine the mayonnaise, vinegar, horseradish, 1/4 teaspoon cayenne, and 1/2 teaspoon each salt and pepper; set aside.
In a small bowl, combine the paprika, remaining 1/4 teaspoon cayenne and 1/2 teaspoon each salt and pepper.
Thread the shrimp onto skewers and season with paprika mixture. Lightly oil the grill. Grill the shrimp for two minutes, turn, brush with 1/4 cup of the mayonnaise mixture and cook until opaque throughout, 1 to 2 minutes more. Brush with another 1/4 cup sauce and transfer to a platter.
Serve the shrimp with the remaining sauce, toasted bread, salad greens, and potato chips, if desired.
